So many readers ask me for the recipes in my books. Here's one from Squashed -- Mannie Plummer's pumpkin bread. I got this recipe from a friend years ago.
Mannie's Pumpkin Bread (makes 2 loaves)
Mix all together:| 1 cup oil | 1 tsp salt |
| 2 cups sugar | 2 tsp baking soda |
| 3 cups flour | 2 tsp baking powder |
| 2 cups pumpkin | 3 tsp cinnamon |
|
4 eggs |
Bake at 350 degrees in greased loaf pans for about one hour.
Test for doneness with a thin knife.
